Robin Arzón does not leave home without the essentials: her phone and, apparently, some tofu.

Arzón takes tofu almost everywhere—from her car and stroller to the top sports award show. When she attended the awards with a clutch in hand, tofu made the cut. 

The nuggets start with extra-firm tofu coated in breadcrumbs, nutritional yeast, garlic powder, onion powder, and oregano. Cornstarch and plant-based milk help the seasoning cling to the craggy pieces before they cook in the air fryer. The result is a crisp, golden coating with plenty of edges for dipping.

And, naturally, the ranch also begins with tofu. Silken tofu gives the dressing a smooth base, while miso, dill, chives, garlic powder, and vinegar bring the familiar savory, herby flavor.

Crispy Air-Fried Tofu Nuggets

Ingredients

  • 16 ounces extra-firm tofu, drained
  • 2 tablespoons plain breadcrumbs
  • 2 tablespoons nutritional yeast
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1½ teaspoons kosher salt
  • 2 tablespoons cornstarch
  • 3 tablespoons unsweetened soy milk or other plant-based milk
  • Tofu Ranch Dressing, for serving

Directions

Wrap the tofu in paper towels and set it on a plate. Set another plate on top and weigh it down with a few cans of beans or tomatoes. Let the tofu drain for about 10 minutes.

Meanwhile, whisk the breadcrumbs, nutritional yeast, garlic powder, onion powder, oregano, and salt together in a small bowl.

Unwrap the drained tofu and cut it in half lengthwise to make two thinner pieces. Break the tofu into craggy 1-inch pieces and place them in a large bowl.

Add the cornstarch and toss until the tofu is completely coated. Add 2 tablespoons of the soy milk and toss again to create a sticky paste.

Add about half of the seasoning mixture in large pinches, then toss the tofu again. Repeat with the remaining 1 tablespoon soy milk and the rest of the seasoning. Press any stray seasoning onto the tofu pieces.

Preheat an air fryer to 400°F. Arrange the tofu pieces in a single layer, working in batches if necessary. Air-fry for 10 to 15 minutes, flipping halfway through, until the coating is golden brown and crisp.

Serve hot with plenty of Tofu Ranch Dressing for dipping.

Oven option: Arrange the nuggets on a parchment paper–lined rimmed baking sheet. Roast at 450°F for 10 to 15 minutes, flipping halfway through, until golden brown and crisp.

Tofu Ranch Dressing

Ingredients

  • 1 (12.3-ounce) package silken tofu, drained
  • 2 tablespoons white miso
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon white wine vinegar
  • ½ teaspoon kosher salt, plus more as needed
  • 1 teaspoon dried dill
  • 1 teaspoon dried chives
  • 1 teaspoon freshly ground black pepper

Directions

In a blender, combine the tofu, miso, onion powder, garlic powder, vinegar, and salt. Blend on low until smooth.

Scrape the dressing into a small bowl and whisk in the dill, chives, and pepper. Taste and add more salt if needed.

Serve with the Crispy Air-Fried Tofu Nuggets.

Storage

Refrigerate leftover dressing in an airtight container for up to 3 days. The vinegar will thicken the dressing as it sits, so whisk in 1 tablespoon warm water before serving again to loosen it.
