Butternut-Sausage Breakfast Casserole

Ingredients

  • Cooking spray
  • 2 lbs (907g) butternut squash, cut into ¾-inch cubes
  • 1 tbsp olive oil
  • 1 medium (110g) onion, vertically sliced
  • 8 oz. (227g) lean turkey breakfast sausage
  • 5 oz. (142g) fresh baby spinach
  • 1 cup (241g) 2% reduced-fat milk
  • 1/2 cup (57g) grated aged Gruyere
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 large eggs
  • 1/4 cup (28g) shredded Parmesan

Directions

Preheat the oven to 375°F (190ºC). Lightly coat a 13-by-9-inch baking dish with cooking spray. Spread the butternut squash cubes on a baking sheet in a single layer and roast at 375°F (190°C) for 15–20 minutes, or until just tender but not soft.

While the squash roasts, heat a large (12–14-inch) nonstick skillet over medium-high heat. Add the oil and swirl to coat. Add the onion and sauté until it begins to brown, about 6 minutes. Crumble the sausage into the pan and cook until browned, about 6-7 minutes. Add the roasted squash and cook 1-2 minutes, stirring to combine. Add the spinach in batches, stirring until wilted. Transfer the mixture to the prepared baking dish.

In a large bowl, whisk together the milk, Gruyere, salt, pepper, and eggs. Pour the egg mixture evenly over the squash mixture and sprinkle with Parmesan. Bake until set and an internal temperature of 160°F (71°C) is reached, about 30 minutes. Broil for 2 minutes to brown the top, if desired.

Cut the casserole into 8 equal pieces and serve.
